				<ul class="directions-list"><li class="direction-step">Paprike oprati, izdubiti, sa strana ih na dvije strane zarezati vrhom noža da u njih može ulaziti temeljac. Sitno isjeckati crveni i bijeli luk, usitniti peršun, potom sjediniti sve sastojke – smjesu za punjenje (osim paradajz pirea).</li><li class="direction-step">Dodati pola fildžanića vode (neko stavlja jedno jaje, ja ne jer dolme znaju da budu tvrde). Potom filovati paprike. Složiti ih u šerpu. Malo ih posuti suhim začinom zato što paprika zna da izvuče sol iz punjenja. Staviti jednu malu pliticu ili neki limeni tanjir po vrhu. Naliti ili temeljcem ukoliko ga imate ili, ako nemate, a imate negdje koščicu jednu ili komadić rebra, možete staviti u sredinu paprika kad slažete. A ako nemate ništa, zaliti običnom vodom i staviti da se kuha.</li><li class="direction-step">Pred kraj kuhanja, po vrhu dodati razmućenog paradajz pirea u vodi. I nakon jedno 45 minuta kuhanja, kad je dolma kuhana, jednu kašiku brašna u šolji razmutiti sa vodom i usuti kroz cjedaljku u šerpu dok vre dolma. Zavisi kako ko voli, može se još aleve paprike i paradajz pirea usuti da bude sos crveniji.</li></ul>

<p>Ja volim naše domaće hercegovačke paprike. Sitne su najljepše. Oko 22 sitne paprike su teške jedno kilo.</p>



<p>Može se ukoliko u kući ima lista raštike, može se i list raštike obariti pa napraviti miješanu dolmu paprika i japraka, jer ide ista smjesa i za japrak.</p>



<p>Može se i filovati koji paradajz ili izdubljena tikvica ili patlidžan. Svu smjesu koju se izdubi iz povrća, u tom slučaju, dodati u smjesu za punjenje.</p>



<p>U dolmi imate i meso i povrće i rižu. To je izuzetno zdravo jelo.</p>



<p>Dolma se može služiti sa pire krompirom. Ili jedan dan sama, a drugi dan uz pire krompir, zavisi od količine.</p>

				<ul class="directions-list"><li class="direction-step">Prvo pravimo smjesu za punjenje.<br /><br />Dvije glavice luka sitno usitniti. Po pravilu, bilo bi dobro jednu usitnjenu glavicu luka upržiti, a drugu staviti svježu u meso. Tri čena bijelog luka isjeckati. Dodati jednu šoljicu riže, jedno jaje (ne mora), suhog začina (tipa vegeta), kašičica soli – zavisno od slanoće kupusa, biber, aleva paprika, nekad stavim i peršuna, kad ima. Sve dobro izmiješati i smjesa je gotova.<br /></li><li class="direction-step">Potom motamo sarmu.<br />Kupus očistiti, stanjiti srednji korjen. U mlakoj vodi oprati kupus. Neko ga obari, ja ga samo stavim pod mlaku vodu pa zavijam.<br />Zavijati sarme. Ja volim manje, ali često se prilagodim veličini lista kupusa.</li><li class="direction-step">Redanje sarmi i kuhanje.<br />Na dno šerpe ili lonca staviti ostatke kiselog kupusa (središnji dio tanko izrezati u komade i šta ostane). Redati sarme, a između njih stavljati suho meso. Svaki ili svaki drugi red sarme poprašiti alevom paprikom. Kad se sve posloži, dodati vode da ogrezne (da prekrije sarmu). Ako se kuha u pretis loncu, treba je kuhati oko 40 minuta. Ako se krčka u šerpi, onda se krčka što duže (min 2 sata), to bolje, uz dolijevanje vode.</li></ul>

				<ul class="directions-list"><li class="direction-step">U pretis lonac stavila isjeckano meso. Teletinu i mali dio junećeg rebra. Dodaj dvije glavice luka, dvije paprike, jedan paradajz. Malo ulja. Upržila. Dodala bibera, vegete, vode da ogrezne. Zaklopila lonac. Kad je provrelo smanjila i kuhala 20 minuta.</li><li class="direction-step">Izrezala patlidžane na kockice pa posolila. Ostavila da stoje u soli dok se meso kuhalo. Preprala patlidžane. Otvorila lonac, dodala patlidžane. Istovremeno sam dodala rižu. Dodala još malo vode &#8211; manje nego da ogrezne. Poklopila i kuhala 10 minuta.</li><li class="direction-step">Preručila u šerpu. Još malo viruckalo i to je to. Pred kraj kuhanja staviti i peršun, ako ima.</li></ul>

<p><em>Kad se pirjan pravi s mljevenim mesom, nije potrebno stavljati u pretis lonac jer ne iziskuje dugu pripremu.&nbsp;</em></p>



<p><em>Patlidžani se u pripremi izrežu na kockice. Mogu se posoliti da izađe gorčina ili obariti kratko u slanoj vodi.   </em></p>

				<ul class="directions-list"><li class="direction-step">2 glavice luka isjeckati, malo posoliti i ostaviti da odstoje u zdjeli. Potom rukom izgniječiti luk da bude mekši, da se lakše oblikuje s mesom. Dodati mljeveno meso, jedno jaje, bibera, suhog začina, malo aleve paprike i soli, šoljicu riže i malo peršuna. Sve dobro izmiješati i napraviti kompaktnu, ujednačenu masu.</li><li class="direction-step">Izručiti na tabak posut brašnom. Kompletnu smjesu obrašniti, potom rukom uzimati komadiće smjese i formirati oblik po unutrašnjosti šake. Pobrašniti šakavce i slagati na tacnu. Zagrijati ulje u tavi i pržiti šakavce. Pri prženju, okrenuti ih i zapržiti sa svih strana. Izvaditi šakavce i složiti u šerpu.</li><li class="direction-step">U ulje gdje su se pržili dodati tri kašike brašna i pola kašike slatke aleve paprike, prepržiti. Miješati tokom prženja i dodati šolju, dvije vode, da se napravi saft kojim ćemo preliti šakavce u šerpi da ogreznu.</li><li class="direction-step">Potom šerpu vratiti na kolo da viruckaju 10, 15 minuta, kako bi se riža u šakavcima skuhala. Po potrebi dolijevati vode ako zafali. Po završetku kuhanja, šakavci treba da su ogrezli u finom saftu.</li></ul>

<p>Mogu se jesti sami, a odlično idu uz rižu, sataraš, tjestenine, puru itd.</p>

				<ul class="directions-list"><li class="direction-step">Izrezati luk nasitno. Paradajz, papriku i mrkvu također usitniti. Ispirjati u šerpi na malo ulja. Propirjati zajedno s povrćem meso, dodati mohunu.</li><li class="direction-step">Mohunu &#8221;dva puta prebaciti preko kašike&#8221; (promiješati) također pirjati da se izmiješa kompletno povrće, meso i mohuna. Doliti vodu da ogrezne (da je povrće u vodi.) Dodati začine &#8211; vegetu, biber, malo soli. Kada provre, smanjiti vatru, poklopiti na pola i pustiti da se pirja.</li><li class="direction-step">Nakon izvjesnog vremena, opet doliti vode. Kada je mohuna omekšala, presuti je sa rižom da upije vodu. Pirjati dok višak vode ne ispari. Pred kraj dodati vezu isjeckanog peršuna.</li></ul>

<p>Isti je sistem rada i mohuna bez mesa &#8211; samo se meso ne dodaje.<br></p>



<p>Ako se dodaje krompir, ukriža se kad se dodaje voda da mohuna ogrezne. Ukoliko se pravi mohuna bez mesa, može ići kao prilog dinstanom bataku, faširanim šniclama, saftu.</p>

<p>Ako je mohuna svježa, prvo je treba očistiti i izrezati preko pola, zavisno od dužine &#8211; neke na troje, neke nikako. Potom oprati. Najbolje je staviti vajnik pun mohune u sudoper, na njega staviti tanjir (da mohune ne izlaze) i pustiti vodu. Neka malo voda ispire mohune &#8211; nekoliko minuta.</p>

				<ul class="directions-list"><li class="direction-step">U pretis lonac staviti dvije manje glavice luka ili jednu veću (može i dvije veće, kako ko voli), papriku presječenu na pola, paradajz presječen na pola ili na četvero, jedna do dvije mrkve i meso izrezano na sitne komade (ako je crven &#8211; na kockice, ako je s kosti ili rebra &#8211; kako je najzgodnije). Začiniti po ukusu vegetom, s malo soli i bibera. Luk se prije stavljanja u lonac može nagoriti na ringli s jedne strane radi arome. Dosuti vodu u lonac &#8211; zavisno od količine mesa (na pola kila možda litru i pol). Kad provre, ako počne pjeniti, pokupiti pjenu kašikom. Onda zatvoriti pretis lonac. Kad pretis počne pištati, smanjiti i ostaviti 20 &#8211; 25 minuta da se meso raskuha.</li><li class="direction-step">Otvoriti lonac, odliti pola mesne vode u jednu šerpu za supu . Viljuškom izgniječiti raskuhano povrće u kašu. U ostatak mesne vode u loncu dodati mohunu. Ako je potrebno, doliti još vode. Ako ima, dodati malo peršuna. Ostaviti da ponovno provre. Potom zatvoriti lonac i kuhati još 10 minuta. Po želji, može se uz mohunu dodati i dvije krompire isječene na kockice.</li><li class="direction-step">Isključiti, presuti u šerpu i nastaviti s kuhanjem. Malo brašna i aleve paprike razmutiti u vodi za zapršku. Kad provre, kroz cjediljku, umiješati u mohunu. Promiješati sve, ostaviti malo da virucka i isključiti.</li></ul>
